Mmmmmmm...Debris!
My blogging friend Danno has two blogs (Cook's Journal and New Orleans Cuisine) and a website (NOLA Cuisine). At NOLA Cuisine, you can find all kinds of wonderful recipes like the one pictured above.
The sandwich is a Roast Beef Po'boy with Debris Gravy. Debris gravy is gravy made out of the scrumptious little bits of meat and gravy at the bottom of your roasting pan. Regarding the desired tenderness of the meat for the sandwich, Danno says: the object is for the meat to just fall apart…not by breathing on it, that would still be too tough, but by just looking at it. About a 10 second stare should do the trick.
If you don't want to make your own and you happen to be in New Orleans or are planning a trip to New Orleans, Mother's Restaurant at 401 Poydras is famous for their debris sandwiches.
I also found out from Danno that there is a website you can check out to find out which restaurants in New Orleans are re-opening and when.

Living among the Maharishi up here, we have a lot of restaurants serving cuisines from around the world. But what I wouldn't give for some good old Lousianna cooking. My brother, who lived down there for a few years, can cook a mean shrimp boil and the gumbo down there is a piece of heaven. Are there any places down there that will mail food kind of like the famous Omaha Steaks Company?
Ed - I'll check into that and do a post. I bet there are some places in Lafayette that would do that. Maybe Danno knows of some, too.
MOTHER'S is YUMMY....but plan on waiting in line. We rode the ST CHARLES street cars all the way to the end and then jumped off at Poydras street hoofed over a block or so and PIGGED OUT. But even though the lunch hour was over there was still a line. But it was worth it.
Glad you liked it Laurie Kay, there's nothing like a Roast Beef Po' Boy. You have to love a sandwich that is so messy that you need a shower after you eat it.
Zina - I know what you mean. We stood in line forever. Phil and Steve didn't even wait. They went next door to Subway. Philistines!
