My "World Famous" Autumn Pudding (Yams) Recipe

For J's Daughter:

Autumn Pudding

3 cups cooked mashed sweet potatoes
1 cup sugar
1/2 teaspoon salt
2 well-beaten eggs
1/4 cup margarine
1/2 cup canned evaporated milk
3 teaspoons vanilla
1/2 teaspoon cinnamon
One 8-ounce can crushed pineapple, drained

Topping: (if you make this recipe in a 9 x 11 baking dish instead of a 3 quart casserole, double topping)
1 cup brown sugar
1/3 cup flour
1 cup broken pecans
1/4 cup margarine

Mix potatoes, sugar, salt, eggs, 1/4 cup margarine, milk, vanilla, cinnamon and pineapple. Grease a 3-quart casserole and fill with sweet potato mixture.

Combine brown sugar, flour, pecans and remaining 1/4 cup margarine. Sprinkle on top of sweet potatoes.

Bake uncovered 30 minutes at 350 degrees.

I knew you could make something from scratch. Any ideas on a good evaporated milk substitute? a slightly thickened coconut milk perhaps? Heavy cream?

I will use oat or rice flour in the topping, probably oat.

Can't wait to try it!

Susan -

Cooking from scratch: I'm a very good cook because the perfectionist in me won't let me be less. I just DON'T cook. Big difference. My desserts are to die for. When I do cook, time is usually a factor so "from scratch" isn't an option, but it's really the only way to go. :)

The milk: Google "evaporated milk substitute." There are lots of substitutes but I dont' remember which stuff you're allergic to.

Who told you I can't cook?!

Mmmmm, I can't wait to make it (I have the recipe card from the shower, and Mom put it in an adorable book!).
Scratch cooking is best, but not everyone has the time so I know what you're sayin'! Maybe if I was at home all the time, I'd do it. Alas, I must earn a paycheck to keep me in the lifestyle to which I have become accustomed. :)

I (and other of your friends) know that you are an excellent cook first hand.

Jen - I must plan a magnificent dinner party next time you guys are in town! Perhaps, an after-wedding combination bachelor/bachelorette party with good food, good liquor and, sorry guys, no strippers...until everyone goes home. ;)
